I think every Alaskan has their own secret method to smoke salmon. I personally do it the old wet brine way and smoke it in an old smokehouse that uses wood fire/smoke to do the smoking. The videos below offer about 45 minutes worth of options including a dry brine and wet brine.

In addtion to the above videos, students should pick one of the following projects:
--construct a model smoke house and take a picture and send to me
--make a video of you explaining your favorite method of taking salmon fillets and smoking them. Go through the entire process.
--create a recipe and describe the process you use to smoke salmon for someone to follow in written form. Include methods to prepare fish, ways to brine, smoking, etc.
Log the time doing one of these projects.
